Down N Out
So as Down n Out do off the chain fried chicken, I though it fitting to do this Xmas themed burg with something fried. So the obvious was turkey.
Soaked the turkey breasts overnight in eggnog and buttermilk, along with some Xmas spices; mace, all spice, cinnamon etc. Dredged in egg white and eggnog, flour then deep fried to crispy goodness!
The sausage stuffing contained pork mince, orange zest, brandy, dried cranberries, pistachios, walnuts, sourdough, sage, thyme, Xmas spices and roasted crunchy on the outside.
This was like Xmas with every bite! IMO this needed one more thing, GRAVY!! Can’t believe I didn’t think of that when dreaming this one up!
Whether the judges/people find this burger appealing or not, I feel I should preface this post by saying, this is the most fulfilling task I’ve maybe ever carried out.
So this was a labour of love that took approx 6hrs to make (over two days cos I had places to be).
The inspiration was a classic roast dinner - roast meat & veggies, gravy & warm sweet spices etc.!
I call it, Deck The Halls with Pork and Gravy

Ok so i never thought this would actually work as well as it did but damnnn it was amazing !!
I don't think i could of found any other ingredients that work together as well as these do especially when I had basically everything already in fridge mmmmmmmmmmm looks like Santa's getting me something good for Xmas now
I really need to learn how to take better pics too hahaa
I was bored and had plenty of leftovers so why bloody not make another burg hahaha

Top/brekky: Ham and cheese croissant
Middle/lunch: Brioche slider with prawns, red onion and mangyo (mango mayo)
Bottom/dinner: Brioche bun with 2x chicken + beef patty/Woolies smokey cheese, mashed potato and cheddar patty, gouda and caramelised onion dip, topped with gravy
